Pumpkin Season

As pumpkin season is officially open, here you have an easy way on how to prepare a healthy pasta with our star- pumpkin. You can take this dish to work with you and eat it for lunch.

Ingredients for 2 portions:

  • 300 g pumpkin
  • 5 spoons of butter
  • 3 sweet onions
  • 1/3 spoon of powdered nutmeg
  • 150 g pasta e.g. fettuccine, spaghetti
  • 80 ml sweet cream 30% or 18%
  • 2 spoons of parsley leaves
  • 5 spoons of parmesan
  • Cut the pumpkin into small cubes and take the seeds and skin out.
  • Heat the butter on the frying pan, add chopped onion. Add salt and stew for 10 minutes.
  • Add pumpkin cubes, salt and nutmeg and stew for another 15-30 minutes until the pumpkin gets soft.
  • Boil pasta al dente.
  • Add to the pumpkin sweet cream, parsley leaves and parmesan.
  • Mix pasta with the pumpkin sauce. You can add additional parmesan on top if you like.
